dc.description.abstractAlzheimer’s Disease (AD) affects 5.7 million Americans. White button mushrooms (WBMs) are considered an antioxidant due to their high source of selenium and have been shown to promote nerve growth factors (NGFs). Selenoproteins, particularly Selenoproteins M (SelM) and P (SelP), are an integral part of memory consolidation and preservation in mouse models. J20/hAPP transgenic mice and wildtype (C57BL/6J) mice were fed a 10% WBM feed three times per week to yield a 5% total diet of WBMs. Behavioral tests were conducted at 3.5 months and 8 months of age. During MWM, J20 mice on the WBM diet at 8 months of age were faster at reaching the platform compared to J20 mice on the control diet (p<0.014). In Western blots, J20 mice on the WBM diet had the greatest density of SelP compared to the other groups (p<0.015).
